This recipe couldn’t be simpler and makes for a fantastic lunch box filler or mid day energy boosting snack. They are quick to prepare and perfect to make on a Sunday afternoon, ready for the busy week ahead!
No Bake Cocoa Energy Bars:
4 cups pitted dates
½ cup NOMU Cocoa Powder
1 cup rolled oats, uncooked
1 cup raw almond, finely chopped
½ cup raw cashews, finely chopped
½ cup raw pecans, finely chopped
½ cup desiccated coconut flakes
½ cup oat bran
½ cup dried cranberries (or dried fruit of your choice)
Place dates in a bowl and immerse in hot water and soak for 15 minutes.
Drain the water and place the dates & cocoa powder in a food processer and pulse until evenly blended.
Transfer this mixture to a large bowl and add the chopped nuts, coconut, oats, oat bran and dried fruit if desired then mix thoroughly by hand.
Line a baking sheet (33cm x 48cm) with wax paper and place the mixture onto the sheet. Cover the mixture with another piece of wax paper and baking tray and gently press until compressed and flat. You can use a meat mallet or a heavy rolling pin to create an even surface.
Refrigerate for 1 hour, once firm, cut bars into desired size.
These can be stored in an airtight container in the fridge for ± 1 week ( if you can manage to keep your mitts off them!)
